Our approach to Baldwin Spirits™ is rooted in curated, small-batch distillation. Operating out of our dedicated "Production Vault" on the lower lot, we maintain a streamlined, high-efficiency footprint by utilizing premium base ferments. Housing both commercial reflux and pot stills, this facility is where we develop, bottle, and hand-number each unique expression—focusing on strictly limited "Single-Run" batches.
Beyond our signature portfolio of gin, vodka, and whiskey, we proudly distill a proprietary line of zero-proof Non-Alcoholic (NA) spirits, catering to the sophisticated sober-curious palate. These house-made spirits serve as the foundation of our elevated cocktail program and are available for exclusive tasting, guided tours, and retail purchase directly within the historic Saloon.

The Production Infrastructure
Our facility is engineered for operational agility and precision. By bypassing traditional large-scale fermentation, our infrastructure is purposefully streamlined, allowing our team to focus entirely on the art of distillation, rigorous quality control, and state-of-the-art safety. This highly efficient setup provides an immediate strategic advantage: while traditional alcohol licensing is being finalized, we are utilizing our commercial reflux and pot stills to develop and launch a premium line of zero-proof, non-alcoholic spirits. This allows us to establish the Baldwin Spirits™ brand and deliver complex, high-quality flavor profiles to the market from day one.
