Our approach to Baldwin Spirits is rooted in curated, small-batch distillation. By bypassing traditional large-scale fermentation and instead utilizing high-quality, wine-based ferments, we maintain a streamlined and efficient production footprint. Our facility, located at the rear of the property, houses both reflux and pot stills where we develop, bottle, and hand-number each unique expression. These spirits serve as the foundation of our cocktail program and are available for exclusive tasting and retail purchase within the historic Saloon.

The Production Infrastructure

Our production facility is engineered for operational agility and safety. Because we are bypassing the initial fermentation of grains and sugars, the infrastructure is streamlined to focus on distillation, safety, and hygiene—prioritizing advanced fire prevention and suppression systems. This efficient setup allows for immediate utility: while we await traditional spirit licensing, we will utilize our reflux and pot stills to develop and launch a premium line of non-alcoholic 'spirits,' establishing the Baldwin brand in the market from day one.

The culmination of this project is a vertically integrated brand ecosystem. By producing high-quality spirits on-site, we drastically reduce the Saloon’s cost of goods while creating a premium retail product sold over the counter. This synergy turns every house cocktail into a marketing tool and a high-margin asset. By maintaining a design aesthetic that honors the Saloon’s historic legacy, we are building a cohesive brand and a proven business model that is primed for acquisition by a larger entity or a strategic investor.
